Chocolate Drop Cookies
1 cup granulated sugar
1/2 cup butter or regular margarine, softened
1/3 cup buttermilk
1 tsp vanilla
1 egg
2 ounces unsweetened baking chocolate, melted and cooled
1 3/4 cups all purpose flour
1/2 tsp baking soda
1/2 tsp salt
Chocolate Frosting (recipe follows)
Heat oven to 400 F. Grease cookie sheet with shortening or cooking
spray. Beat sugar, butter, buttermilk, vanilla, egg, and the chocolate
in a large bowl with electric mixer on medium speed or mix with a wooden
spoon. Stir in flour, baking soda, and salt. Drop dough by rounded
tablespoonfuls about 2 inches apart onto cookie sheets. Bake for 8 to
10 minutes or until almost no indentation remains when touched in the
center. Immediately remove from cookie sheet to wire racks to finish
cooling process. Cool completely, about 30 minutes. Frost with
Chocolate Frosting.
Chocolate Frosting Recipe:
2 ounces unsweetened baking chocolate
2 tbsp butter or regular margarine
2 cups powdered sugar
3 tbsp hot water
Melt chocolate and butter in a 2 quart saucepan over very low heat,
stirring often. Remove from heat. Stir in powdered sugar and the hot
water until smooth. If the frosting is too thick, add more water, 1
teaspoon at a time. If the frosting becomes too thin, add more powered
sugar, 1 tablespoon at a time. Yield: About 3 dozen cookies
