Amish Sugar Cookies

 
Everyone I've ever made these cookies for describes them as very similar to tea cakes; they are very fluffy with a unique flavor. The recipe was given to me by a close friend of my great-aunt Jackie. They are YUM YUM good!! — Oct 29, 2002
4   eggs, beaten
3   cups white sugar
2   cups cooking oil (I use canola oil)
2   cups buttermilk
2   teaspoons baking soda
6   cups all-purpose flour
1 1/2   teaspoons salt
2   tablespoons baking powder
3   teaspoons vanilla extract
    cinnamon sugar
1.  Preheat oven to 400 degrees Fahrenheit.
2.  In a very large mixing bowl, cream together eggs, sugar, and oil.
3.  Add buttermilk, baking soda, salt, baking powder.
4.  Gradually beat in flour, and beat until mixture is smooth.
5.  (If you let the batter sit for about 5 minutes after beating in all the flour, it will be easier to put on cookie sheets and won't spread out as much.) Pour by 1/4 cupfuls onto a greased cookie sheet.
6.  Sprinkle tops of cookies with cinnamon sugar.
7.  Bake at 400 degrees for 7-8 minutes.
8.  Watch carefully and do not overbake.
9.  If the cookie springs back when touched, it's done.
